Smiths describes the dish in his cooking book: "A bowl full of freshly made corn polenta is one of the world's greatest grain dishes. Polenta is a traditional Italian pudding made with cornmeal. Freshly made, it has a soft, creamy texture, and it is additively delicious (NO LIE). It can also be served by cooling and hardening it, then slicing it and grilling or pan-searing it until it forms a beautiful crispy crust with a creamy interior."
I would pick polenta over mashed potatoes anytime. The taste is richer and the texture smoother. I have not made it myself (yet), but I have watched Mike several times, and it looks like a pretty simple dish to do. It's more time consuming than mashed potatoes, but it's worth it. I promise.
